Date and Nut Granola
Granola really is better when it’s homemade. It’s crunchy, roasted, and all round better than store bought.
While granola really is a choose your own adventure baked good, this recipe is a go-to when you need some inspiration.
Ingredients
2 Cup rolled oats
1/4 cup of cashews (very roughly chopped)
1/4 cup almonds (very roughly chopped)
1/4 cup pecans (very roughly chopped)
1/4 cup seeds of choice
Approximately 6 large medjool dates (chopped into 2-3cm pieces)
2-3 tbsps oil of choice (coconut or olive oil works well)
2-3 tbsps of maple syrup (or honey if you prefer the flavour)
Dash of cinnamon
Pinch of salt - to taste
Method
Pre-heat oven to 180 degrees celsius.
Chop the nuts and dates into rough pieces.
Combine all ingredients into large mixing bowl. Add more oil if you feel like it’s not completely coated. And add more sweetener if you like it sweet.
Place on a baking tray. Aim to have one layer, without stacking the ingredients on top of each other. Bake in two lots if need be.
Bake for 10-15 minutes. You want it to be golden but not too dark. Nuts will roast quickly, so keep an eye on it.
This obviously pairs well with yoghurt and fruit, or milk, or even for a quick snack.
