Chicken Caesar Style Salad

This is a slightly lighter version of a classic. You really can’t go wrong with a Caesar Salad.

This recipe was born after a friend made us the viral chicken Caesar taco things from Instagram. We now use a very similar way to make dressings in our house for a range of things. Including this Caesar dressing. A mix of yoghurt and mayo instead of straight mayo. It’s lighter and still tastes amazing.

Ingredients

Chicken

  • Four Chicken breasts

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Pinch of salt and pepper

    Salad

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 Cos lettuce

  • 4-5 middle rashers of bacon

  • 2-3 pieces of stale seeded sourdough (or whatever is there)

  • ½ cup shredded parmesan cheese

    Dressing

  • 150g greek yoghurt

  • 80g mayonnaise

  • 2tsp dijon mustard

  • Squeeze of lemon juice

  • 1 tsp garlic powder

  • Handful of grated parmesan cheese

  • Dash of Worcestershire Sauce

  • 1-2 tbsp olive oil

  • Salt and pepper to taste

Method

  1. Pre heat the oven to 220 degrees.

  2. Coat chicken in olive oil and spices, place in an oven dish. Bake for approximately 20-25 minutes depending on the size, until cooked through.

  3. Meanwhile, chop sourdough into small pieces, toss in olive oil and garlic powder. Cook in air fryer, or oven on a high heat until golden brown. Set aside.

  4. Cook bacon in a pan on medium to high heat until crispy. Set aside.

  5. Mix dressing ingredients together, adjust to taste.

  6. Combine lettuce, parmesan, sourdough, and ½ - ¾ of dressing in a large bowl.

  7. Separate between plates.

  8. Top each plate with chicken breast and serve.

  9. Extra dressing on the side and add as desired.
